Tonight I was looking through some cook books and I came across a recipe for Taco Soup -- and I obviously decided I needed to make it tonight. I drove over to Walmart and gathered the following ingredients:
- 1 lb of ground chuck
- 1 pkg. Hidden Valley Ranch dressing mix
- 2 pkgs. Taco mix
- 1 can Rotel tomatoes
- 1 can stewed tomatoes
- 1 can hot pinto beans (chili beans)
- 1 can red kidney beans
- 1 can black beans
- 2 cans shoe peg corn (drained)
I browned the meat while I mixed all of the other ingredients. Then I added the cooked meat to the soup and left that to simmer for 30-40 minutes so all of the food could soak up the flavor.
And it turned out pretty good. Let me know if you decided to try it!
